Before trying manual file edits, use the built-in tools provided by your game client:
Now go to: Documents\My Games\Far Cry 4\ and open GamerProfile.xml with Notepad. Find the line: <Language id="..." /> Change it to: <Language id="en-US" /> Save and close. Set the file to (right-click → Properties → tick Read-Only). This prevents the game from resetting the language.
